American Tuna at Whole Foods--excellent
My local Whole Foods was sampling a bow tie pasta salad with tuna on Saturday and I thought it was delicious. They used a canned tuna brand called American Tuna. It's pole caught tuna from Washington State and apparently you don't have to worry about mercury content because the tuna are smaller than those caught with nets and they don't live at the lower depths like the big guys. It comes both salted and unsalted, and there's just a little bit of water in the can. The tuna itself is tender, not hard or rubbery as canned tuna can be. It's about $5 per 6 oz. can.
Here's a general recipe for the salad: Cook bow ties in salted water and drain. Chop fine some red onion, capers, and parsley (crushed garlic if you like--I don't). Mix chopped ingredients and shredded tuna with pasta (about 1 6-ounce can of tuna per half pound of dry pasta). Dress with olive oil, lemon juice, salt and pepper to taste. Very light and fresh, just right during the heat wave we're having in LA.
