      Another culinary "disease," alas.It's the enthusiastic embrace the technique's received from the likes of Thomas Keller and Ferran("Foam")Adria that troubles me.The NYT article isn't for the gag-prone, either.Can't wait to see how truly disgusting the vulgar versions of the "boil-in-the-bag" schtick prove to be.

        Wave of the future?? No back to the past.

        There are a number of hotels that tried the old cryovac cooking products back in the 80's and '90s ... until they found out that the customers would not pay top dollar for reheated food prepared by people with few culinary skills.
