I'm looking for a particular type of sushi book and I can't seem to find it. I want one that shows me diagrams of each type of fish with what part is best for sushi and how to clean/dissect out the edible bits of such critters as sea urchins. I seem to think that I've seen a book like this at one point--one that focused on what parts were the best, about aging and sushi knives--but these days the sushi cookbooks I see out there are all about making pretty flower designs with carrots and dragon rainbow 49er rolls.
Can anyone recommend a good book for me? Thanks in advance. -c
