ISO - Great salad that can withstand the summer heat
I'm going to a pig roast this weekend and have to bring a salad.
It is a block party (of gourmet neighbours), so a lot of people will be bringing lots of very good food.
Toronto is really hot at the moment and I want to avoid anything with meat or mayonnaise in it, and also anything that will go mushy.
I was thinking about Nigella's watermelon and feta salad. Any opinion on it? Any other suggestions?

I just made a really good barley-veg salad last night. Cooked some barley until done - rinsed under cold water to prevent stickiness. Mixed with grilled corn kernels cut from the cob, halved cherry tomatoes, chopped red onion, chopped green pepper, chopped parsley...oh and some cucumber too. Oil and vinegar dressing with plenty of salt and freshly ground pepper. You could throw in some chopped fresh chilies, maybe some coriander to give it a Mexican slant. And if I were doing it again, I'd leave out the cucumbers. But that's just me.
I started with 1 cup of dry barley and ended up with a really big bowl of salad. -
