ISO Cold meal on a hot night ideas

Hi everyone,

This weather isn't letting up and I'm just about out of salad ideas. What's your favorite meal on a hot night?

    1. Now that my garden is producing nicely my favorite summer food are tomato and mayo sandwich (on toast), tomato salad, cucumber salad, and cucumber salad sandwich (I have a great family recipe for cucumber salad if you want it let me know).

        Yes Please can I have that cucumber salad recipe? Our gradern is rampant with cukes and I have very limited recipes . TIA, LuLu

      2. Cold poached sliced chicken breast with tonnato sauce. i can post a recipe later if you don't hace one.

          1. I like to do room temperature things that I've cooked previously - like grilled squash, grilled chicken, or ratatouille (perfect with the summer produce!). I'll cook up the ratatouille at night (though last night it brought my 5 year old downstairs asking what the smell was, LOL), then serve it at cool or at room temp on couscous the following day. I've been known to grill chicken at all hours - before dawn and after dark!

            If I have the time and think of it, I throw my plates in the fridge or freezer as well - it makes just a small but pleasing difference.

            1. Vietnamese grilled pork over cold rice noodles with raw bean sprouts, herbs & sauce.

              Soooooo good!

              1. Cook orzo or israeli cous cous, rinse to chill. Add halved cherry tomatoes, diced red pepper, chopped olives, feta cheese, chopped arugula, maybe chopped artichoke hearts, a can of flaked tuna, toss w/zesty vinaigrette. delicious and even better next day.
