        <content>made this great "zucchini pizza" a year ago...where shredded zucchini was the crust! i've somehow misplaced the recipe and i have all this zucchini to use!
 
has anyone else made this and have a recipe to share???

      <content>Here's my paraphrase of a zucchini-crusted pizza recipe from the Moosewood cookbook. I haven't made it in many years but it is good, and a great way to use up some of that abundant zucchini.
 
Coarsely grate 3 1/2 cups zucchini, salt lightly and let sit 15 min (I would let it sit in a colander); squeeze out moisture. Combine it with the following: 3 eggs, beaten; 1/3 c. flour, 1/2 c. grated mozzarella, 1/2 c. grated parmesan, 1 T. fresh basil, minced (or 1/2 tsp. dried), salt and pepper. Spread this into a greased 9x13 in. pan and bake at 350 for 20-25 min. Brush with oil and broil 5 min. Add whatever toppings you want and bake at 350 for another 25 minutes or so.</content>
