Converting a white cake recipe to chocolate cake
I love the white cake recipe offered by Cook's Illustrated some years back (I think 1995/1996). I can post the details of it if folks are interested.
But, my question is: is there a simple way to convert this white cake recipe into chocolate by removing some of the flour, adding cocoa, and changing the leavening? I know that the acid content of the cocoa can mess things up if you aren't careful...
