        <content>Easier to peel hardboiled eggs...
 
Someone suggested leaving eggs fresh from the market upside-down on the counter overnight (not sure why upside-down...) then boiling them the next day. This was to make them easier to peel (old eggs peel easier than fresh--but who wants to wait.) It absolutely worked, the eggs almost peeled themselves!</content>

      <content>I'll try it. Made deviled eggs recently and had some difficulity getting that little thin skin off. I use the Julia Child method of boiling eggs but had a problem this last time. Thanks

      <content>I use Shirley Corriher's Method from Cookwise and it works wonderfully:
 
Place eggs in a single layer in a heavy saucepan. Cover with 1 1/2" cold tap water. Partially cover the pot and bring to a full rolling boil (keep an eye as it gets close, or you will have overcooked eggs!).
 
Cover pan and turn heat to low for just 30 seconds. Remove from heat and let eggs stand in hot water for 15 minutes. Pour out the hot water and run cold running water over the eggs for 5 minutes. 
 
I then pour out most of the water and add one tray of ice cubes to further cool the eggs; after about 10 minutes I refrigerate them.</content>

      <content>That might have been me -- at least, I always do that very same thing.
 
The reason to turn them upside down (in the cardboard container) is to get the yolk even inside the white... that way if you're making devilled eggs you don't have the yolk off-centre, which (a) looks ugly and (b) increases the potential for yolk-filling breach.
 
The reason to leave them out overnight is to age the egg.  24 hours out of the fridge is the same aging process as a week in the fridge (or half a week on the door of the fridge).</content>
