        <content>I saw this dessert on a pub menu in London, but was too full after our meal to order it. It sounds wonderful! Can anyone tell me exactly what it is and/or lead me to a good recipe for it?</content>

I've never made it, but it's on my list.  Looks fantastic.  You can get dark Muscovado sugar at some specialty shops or online.  (I suppose you could use dark brown sugar instead, but I wouldn't - muscovado is so much darker and richer)</content>

Trader Joe's has muscovado sugar...at least in MA they do.</content>

      <content>*Many* years ago the NYT had a recipe for this.  It was based, I believe, on the 'original' (supposedly) by Francis Coulson (he was mentioned in Simon Majundar's response to your query on the int'l boad).  My guess is you would have to pay for it, but you could query for it on the NYT site.  If I had a copy, i would post it, but I don't.  Just remember reading the recipe with interest.  They specifically said that the dates are the key ingredient.

      <content>It's a pudding/cake base made with dates topped with a brown sugar/butter sauce.  MMmmmm.  It's really sweet and rich, but that has never been a problem for me.
 
i used to make it quite often and linked to the recipe I used below.  I don't use the water bath and it turns out just fine.  I can't remember if I adjusted the cooking time or temperature, so maybe you should just use the recipe as it.  It's pretty easy and verrrrrrry decadent.
