I recently saw a recipe for a macaroni and cheese recipe where you put the uncooked macaroni in the sauce and cook it all together. I can't remember where I saw this recipe and I would like to make it for a very large gathering where we'll need lots of side dishes. Does anyone know how to make this?

  1. The truth is that I have a recipe like the one you describe but I wouldn't recommend it in a large quantity. The recipe makes probably about 4 servings and because you cook the pasta in a milk mixture and then stir in the shredded cheese it can scorch on the bottom and may not cook evenly if you double the recipe. Works just fine for the regular amount, but you have to do some serious stirring and pot-watching. It saves you washing one pot but doesn't really save a lot of time or make things much easier.

My two cents: cook a large amount of pasta - plain. Drain it. Make a large amount of cheese sauce (plain white sauce with shredded cheese melted into it) and mix with pasta. Dump into greased baking dishes (for large amounts you may want to use disposable foil pans), top with more shredded cheese and buttered crumbs (if you like). Bake until heated through.

Is that too vague? Do you want more specific recipes? I can post them.

Thank you for the insight. I guess I can do the day before and then reheat. Your directions are good. Thanks

You might want to spray the sides of the baking pan(s) with oil and then coat them with freshly grated parmesan or romano cheese. Not only does it help in serving it, making it easier to scoop cleanly away from the sides but it also adds some good texture and falvor too.
