Veal Breast

Just got back from Montreal where we had a truly wonderful roast veal breast at a restaurant called Da Emma. How do I make a roast veal breast at home? This one was flavored with garlic and rosemary and was served with a veal jus. I can't find a recipe in any of my Italian cookbooks, or any other cookbook for that matter. Any help will be appreciated.

  1. Marcella Hazan has a "pan-roasted" veal breast in her first cookbook. Browned, garlic & rosemary & a little white wine added, covered & cooked slowly for quite a while. Precise details escape me, but it's damned good.

      I second this reccomendation. I made it for easter, and it was to die for.
