Just made the red Pepper Hummus from Epicurious linked below. Loved it as an appetizer and now I want to use it up some other way than on crackers, pita, bread. Kind of think it could be good in some sort of sandwich, or......

    I love that recipe and make it all the time. I also add a bit of cilantro to it. I sometimes use it in a sandwich with different sliced veggies or even with falafel. This time of year, I'll grill a bit of ciabatta on the grill (briefly, brushed with a bit of olive oil) along with some veggies and make a sandwich with the hummus as a base.
