A new grocery store opened up here and they carry Bell and Evans poultry. So I picked up some beautiful cornish hens and tried out your simple recipe. It came out fabulous, and we had the roasting juices over jasmine rice. My husband raved over it. Thanks so much! Here's a link to the recipe if anyone's interested in trying it out:

This sounds delicious and do you think it would work for regular chicken pieces if I can't get the hens?

I think it would be fine w/ regular chicken. You can certainly check on it as it cooks and adjust the cooking time/temp if need be.

Glad you liked it! That's one of my stand-by "fancy" recipes for biggish dinner parties. I don't know what it is about cornish hens but people always get so impressed when you serve them. Love stuff like that - so simple and delicious. And thanks for letting me know.
