If I need it on Sunday afternoon, is it a good idea to make it on Saturday and refridgate it? Will I need to rebeat or bring to room temp before using?
You can remake it no problem...and yes, you will probably have to rebeat it after softening it at room temp for a bit. Don't be alarmed if it weeps a little...just beat it back together and it's fine.
