muffins in the freezer
just wanted to further update on the quick-and-healthy whole-grain muffin quest...
i took a frozen muffin (link to recipe below) out of the freezer last night and put it in the refrigerator in a little plastic baggie. when i took it out this morning, it was thoroughly defrosted and pleasantly moist, but not soggy at all!
so exciting! instant healthy yummy whole-grain breakfast!
i've got seven more muffins to work through, but a new recipe will be forthcoming after that!

Thanks for the report. When you say you have seven muffins, do you mean seven individual muffins, or seven muffin recipes?
I've been thinking lately that I'd like to make a whole-grain banana muffin. Bananas add so much sweetness and moistness that I think this could work well, but I have no leads on where to find a recipe. I might try yours as well.
