leftover crab

My eyes were bigger than my stomach last night and I have about 2 cups of cleaned snow crab legs. Any ideas / recipes on what to do with it for dinner for 2 tonight? I've never made crabcakes. That or salad maybe?

    One of my favorite uses is to warm extra virgin olive oil, minced garlic, lemon juice and a little diced tomato in a saucepan, add the crab meat, fresh parsley and a pinch of hot pepper flakes right before you toss is all with hot pasta (spaghetti, perciatelli, linguini). Easy and delicious.

      Melt some butter, put in a small dish, then just dip in the cold crab pieces.

        A simple way to use it would be to toss it into a vodka sauce over some sort of pasta.

          I like the gumbo idea but how about an omlette with some mushrooms, scallions, cheese and herbs?

            We made a crab salad (always with imitation crab, but it should work). We dice the crab and add chopped celery and onion and a bit of mayo and there you go. Light, refreshing, and delish!
