Re. boiling eggs, yes, again... (sorry - bored @ work)
God knows what it is that periodically makes a subject become a fascination here for weeks on end. Lately it's been boiling eggs, then buttercream. Anyhoo, since I always jump on every bandwagon in sight, I tested the below method for boiling eggs this morning and can confirm that it is far superior to any other I've tried. Just so you guys know.
Place eggs in cold water, bring to boil, remove from heat and cover, let stand for 10 minutes, cool under running water.
Yolks were a perfect yellow. Whites weren't rubbery. This is IT.
I just boiled a dozen eggs this morning, and I was remembering the questions too. What I always do, if it helps anyone, is: However you cook the eggs, put in 1 or 2 extra, then just before you think they're done, crack one open and check it out! Then you'll know if they need another minute or so. Immediately putting them in ice water when they are done is crucial too.
