1 T. unsalted butter plus 5 1/2 ounces
5 oz. pistachios, shelled, peeled, and chopped
3 oz. almonds, peeled and chopped
1/2 lb. sugar
pinch of salt
4 eggs
1 oz. Kirschwasser
1 1/4 oz. each sifted AP flour and corn or potato starch
1/2 t. baking powder

Butter 9-in. round cake pan with the T. of butter. Line bottom with parchment paper. Process nuts, sugar, and salt to fine fine powder, almost to paste. Add eggs and process until thick and foamy. Cream rest of butter in mixer until white. Slowly add nut-sugar mixture until emulsified. Mix in Kirsch. Remove beaters. Mix flour, starch, and baking powder. Sift onto batter and fold in. Turn into cake pan and bake at 325 for 35 to 40 mins. Remove from pan immediately, remove paper, and cool on rack. Serve cold with a Kirsh creme anglaise.
