Will eggplant, red and yellow peppers, red onion and mushrooms all cook about the same time roasting in the oven on 350? I'll cut them all about the same size. Thanks Hounds!
Personally, I'd put the mushrooms in a little later, especially if they're smaller mushrooms. Button mushrooms and portobello are pretty hardy, but still cook up pretty quickly. The others should be about the same (only becauseI really dislike undercooked eggplant, but can live with peppers and onions that are a tad crunchy).
