Help! Spring soup ideas
I have to make a "spring" soup for tomorrow night. I would really like to include fiddleheads, but I do not want to make a soup of that only (it's pricey and I'm not sure my friends will like it). However, I would like to have a few in there, either as a garnish or as one of the ingredients in a clear broth with other veggies. I have homemade chicken stock (plain and star anise/ginger flavoured - vietnamese like). Any ideas?
If you have Vietnamese-flavoured chicken broth, make asparagus and crab soup, and throw the fiddleheads in since they won't make too much of a commotion.
How about a combination of the fiddleheads, some shittakes, wild rice, and lemon grass in that ginger stock with some scallions and sake for balance?
clarify the plain chicken stock. at the last minute combine with (just tender) cooked veggies: shelled english peas, perfectly cubed pieces of potato & carrot, fiddleheads, & a pinch of finely chopped chives.
