Biscotti cookies

I tried biscotti cookies for the first itme, but they didn't turn out like the ones I buy. First of all they are more yellow, and they won't slice evenly, and they are not as crisp. What am I doing wrong? I would appreciate any advice.

  1. "first they are more yellow" what color were the ones that you are used to? And what type were you making? Often vanilla, if used, or almond extract will color your dough, also depends on spices. I find cutting tricky also, have best results when not too hot or cold and I use a serrated bread knife (hands on both ends of knife). With respect to not being as hard, you should be baking them in a lower heat oven (325)and test for time. I make several types regularily and one biscotti I do not second bake so they are soft and people rave about them the most (?)!
