Salad and ... something quick?
Making a romaine salad with a some roasted or sautéed red and yellow peppers, maybe some carrot slices, and a bit of crumbled Roquefort and a quick homemade light balsamic vinaigrette or just oil and vinegar. Maybe some crumbled bacon if I have time but there goes the semi-healthy if so.
What are some fairly healthy (no rice or pasta) dishes with simple ingredients that would go well with this?
Since it sounds like you're halfway to making a Cobb salad, then I say make it easy on yourself and add some protein source (lean beef, turkey, chicken, and/or hard-boiled eggs) and call it a meal.
I've been enjoying hearty salads for dinner and then will have a healthy strawberry and banana smoothie later if I get hungry.
Perhaps salmon of some sort? Or dover sole is really light, along with some grilled non-starchy vegetables...
The Union Square Cafe Cookbook has a recipe for a large ribsteak with rosemary scented olive oil that is sliced and placed over salad. I have made it many times. It is delicious, easy and company worthy.
I usually make a quick soup with a salad. Try this: Curry Zucchini soup
1 large onion cut in half and then half moons
1 tbl good curry powder
nice pinch of sea salt
4 small zucchini (also split down and then half moons)
1 quart (swanson's/homemade) chicken stock
In cold pan saute the onion with curry powder/salt 3-4 min. Add the zucchini and let saute another 3-4 min. Add the stock and simmer 20 min. Either with a hand held blender/regular blender, puree. It's amazing.
