Any reason that I need to cook fresh sea scallops before using them for ceviche?

    Scallop sushi is delicious, so as long as you have confidence in the freshness of your scallops, I'd say go for it.

      Plus, for a ceviche, it'll cook a bit in the lime juice.

      As long as it smells fresh (meaning it smells like nothing, of course), it should be safe.
