Making sorbet and ice cream with a Pacojet
My friend is considering buying a Pacojet ice cream maker and asked me for advice. I have never used one so I would like to get input from anyone who has. Does it really make great quality frozen desserts or is the Kitchen Aid Proline series at half the price just as good?

Is this for a restaurant or home use? A Pacoject is a really high powered, wondrous professional gizmo, and it is very, very expensive ( a few thousand)! It spins ice cream and sorbets in a few moments, so you need to start with a very solidly frozen base product, which can sometimes require different preparation depending on the type of ice cream or sorbet. If I had one of those things at home, I would have a glace party every night. It's awesome. I've never used the Kitchen Aid Proline.
