Where do you find tapioca starch?

    In case you don't have convenient access to an ethnic market, many foodie-type stores sell tapioca flour like Bob's Red Mill brand. Little more expensive but it's good quality. Look for it next to the cornstarch.

    In case you need a substitute, cornstarch or arrowroot flour might work, but you may have to adjust ratios.

      i've also found it as "cassava flour" or "cassava starch".

        Just about any Asian or Latin American market will have it.
