Searching for the perfect blueberry muffin recipe

  • m

I have tried quite a few (from Betty Crocker cookbook to Alton Brown's recipe) and none have wowed me, which is surprising because I am really not terribly picky about my muffins. Does anyone have what they consider an ultimate blueberry muffin recipe?

  1. you might want to try searching just a bit further down the Home Cooking board looking for Mrs. Smith's name (probably no more than a month or two old). She recently posted one that she thought was the bee's knees (I've never tried it, so this isn't a personal rec.)

King Arthur Flours, Bakers Companion, has my favorite recipe. It is almost like a blueberry cupcake though. Very fine grained and cake like. It would be on their website. They are called Classic Blueberry muffins. they are supposed to be like the ones served in the Jordan Marsh building in Boston? Very, Very good.

Oh, Jordan's Blues! They were amazing. But definitely closer to cake than muffin.

    2. Try Epi's recipe swap board. One of the posters (Joel?) did the CIA's pastry course and pried the recipe for their muffins out of the chef. He swore that they were the best he had tasted. You might have to go into the archives, it was in the last month or so.

      1. I like the one in Joy of Cooking. You just have to try the variations--different amounts of butter, milk/yogurt, etc. to find the best combination. I use 1/2 whole wheat pastry flour.

        1. The absolute best recipe for muffins of any kind, but especially blueberry, can be found in "The Perfect Recipe," by Pam Anderson. It uses yogurt or sour cream in place of milk, which gives the muffin a very tender crumb. It is not like cake. It is not overly sweet, either. If I weren't at work right now without access to my copy, I'd send it to you. Maybe I'll do that tonight when I get home. Really, it's the best.
