clueless with buffalo
On a whim I bought a small buffalo roast from Whole Foods last night. I've never cooked buffalo and have no clue what to do with it. I'd very much appreciate recipes/suggestions. Thanks.
Lard it or wrap it in bacon and roast at 350 for about an hour or until medium/ medium rare. Slice THIN and enjoy. Yum! Use the pan drippings for gravy.
The main thing is to not overcook, and as with the bacon suggestion, to add a little fat to it if possible. It is so lean it cooks more quickly and can dry out.
