Smothered Cabbage

If someone has a marcella Hazan cookbook, is it possible for you to tell me how the smothered cabbage is done. I read a review in an earlier thread about it and I have a head of cabbage and time to do it.

    For 2 lbs of cabbage:

    Saute 1/2 cup of onion in a 1/2 cup of olive oil until deep gold. Add 1 tbls garlic, saute a bit more and then add shredded cabbage and toss. Add S&P and 1 tbls wine vinegar. Cover and lower heat to min. Cook for 1.5 hrs.
