Summer Camp-Cooking Around the World Ideas?

Hello- This board has been such a great place for ideas that I wanted to run a big one by folks. I am the director of an art school that is running a summer camp for kids age 5-12. There are four two week sessions exploring the culture, art, music and dance of four different places. Each camp culminates in an art show and performance and I like to lay out a nice spread of light appetizers, dips, and finger foods. I have my own ideas, but would love to hear your thoughts on what you would put out for the following:
Camp New York City
Camp Middle East
Camp South America

My kids have enjoyed the following:
Hummus with skinny bread sticks (Middle East)
Nutella and apples (European)
Focaccia made from Rhodes Italian bread dough (frozen), sundried tomato spread and asiago cheese.
Edamame (soy beans)(Asian) you can buy the edamame at Costco and steam them. They are addictive however.
