chocolate craving - please help!
I had great success with a stovetop-cooked chocolate custard/pudding.
Cream 4 egg yolks with about 3/4 cup of sugar, and a pinch of salt.
Heat up 2 cups of cream to scalding temperature, infuse with vanilla bean or add vanilla extract and lemon/lime zest.
Pour cream into yolks slowly, mixing until all added in. Put the mixture on top of the stove until it thickens into a creme anglaise-like texture.
Fold in melted chocolate, continue to heat until it gets quite thick. Eat straight out of the pot or refrigerate.
My preference is to sit in front of TV eating out of the pot.
