We didn't really have recipes, that was the beauty of doing a raclette dinner, everyone gets to design their own -- put out dishes of ham, onion, tomato, mushrooms, zucchini, apples? anything you can think of that goes with cheese. Find raclette cheese, shred it up in another bowl. Then each person puts what they want in their tray, cover it with cheese, and let'er melt! Eat with nice bread.
I have the book Raclette by Claudia Schmidt with about 62 pages of ideas for the raclette machine.
If you click on the following link, you can view inside the book at Amazon.com, to preview the table of contents for ideas, the index pages, and some excerpts. If you see anything that strikes your fancy, I can paraphrase a recipe for you. I have not used the book yet, but everything in it looks good.
