red beans and rice
I'm from Louisiana, and I made Emerils (Food Network) recipe the other day and it was really good. I used tasso, andouille, smoked ham hocks, and smoked sausage. One of them isn't called for, but I can't remember which one. The other thing I did was Mark Bittman recomends using coconut milk instead of water to cook your rice, it is so good! I think it will be my permanant recipe.
