What to do when corned beef is forbidden...

Christina D Mar 16, 2005 01:04 PM

My husband absolutely, positively, with every fiber of his being *hates* corned beef. So, any suggestions for dinner tomorrow night? Bonus if it's healthy.

Well, corned beef is not very Irish -- corned pork is more authentic; then again, the whole holiday trappings are more American than anything! So toss the idea of authenticity to the wind. I saw some corned pork spareribs in the market (Foodmaster) this weekend with the nice grey corned beef, but this is Boston....

What about a nice pot roast? Or uncured brisket?

I saw ribs, too. I almost picked them up, but I don't know what to do with them. Suggestions?

What about salmon? More Irish than corned beef.

Or Guinness beef stew (or lamb stew, as curiousbaker suggested).
