Slightly paranoid: I cooked it Sunday- can I eat it tonight?

The subject basically says it all. I made chicken fajitas on Sunday night, and I'm slightly paranoid about eating food past its prime. I usually toss leftovers after 2 or 3 days....I don't want the food to go to waste, but I don't want to get sick. Am I okay if I just reheat it? Thanks.
