extra trout, what to make

i have about five trout leftover from a dinner and was thinking of firing up the grill, but are there any other suggestions on what i could do with them?

  1. Trout is a wonderful fish, but I'm not so sure how they'd take to the grill. As in, would they fall apart? Their skin isn't as tough as salmon. When I wrap them in foil and stuff them with herbs and a little butter they fall apart trying to remove them from the foil.

      I love smoked trout salad - and I don't see why you couldn't cook the trout in some form, and then make a salad. I use, in some combination:

      lemon juice
      chopped celery
      chopped onions or chives
      chopped apples
      some kind of chopped nut - walnuts, pecans, almonds (toast first)
