Mint Chocolate Cake

Okay...So I'm thinking of baking a chocolate cake layered with some kind of mint frosting (not cream cheese) layered in between, something like a mint n' chips ice cream. Anyone with a good recipe or suggestion as to how I'd go about doing this? Thanks a bunch...

  1. Buy some of those Starlight mints -- the round, whilte, hard candies with the red stripes radiating out from the center. They're between the diameter of a nickel and a quarter.

    Unwrap them, put them in a plastic bag, and smash them with the rolling pin or the bottom of a wine bottle. You want some very fine pieces and some slightly larger chunks. Fold the crushed candies into your favorite buttercream which you've flavored either with vanilla (my choice) or a little peppermint extract. If you use the peppermint extract, be judicious and don't over-do it.

    Sprinkle some of the crushed candy on top of the frosted cake, too.
