The poultry market I patronize always has a tray of duck tongues in the cold case. I have very occasionally seen duck tongues on menus, but I have never found a recipe which calls for them. I should add I live in a Chinese neighborhood.
I would love to find a recipe which features duck tongues. Can anyone help me out?
Here is a simple recipe for duck tongues. You can either try it as it is or just take the basic directions (pre cook the tongues in seasoned liquid) and then create a recipe of your own. If you try the recipe and do not have mung bean flour handy just use corn starch. Let us know what you do and how it turns out.
