Here is a great recipe that has been verified by at least one other Chowhound.

Well in my younger days I used to eat sardine sandwiches -- drain the sardines, put mayo on good bread, salt and pepper, and enjoy!

Immediately thought of Richard Wright in 'Black Boy'; Dreaming of sardine sandwiches and 'nilla wafers. Sounds good.

Kippered snacks are great...basically, it's smoked herring...very flavorful and good for you, too. Great with saltines, that's my favorite way to eat them.
