does anyone know how long tofu lasts once the container has been opened?

A few days at most, depending how you've stored it (and type/brand). Even in an airtight container, not very long.

Smell it: if it's bad it will smell sour. If you've stored it in water and the water is turning murky/slimey, it's bad.

If you change the water (and you should store it in water) daily, you should be able to get a week out of it with no problem. Filtered water generally works out better if you're tapwater is noticeabley chlorinated.
