Chocolate Raspberry Cake

Jeanne Feb 9, 2005 05:00 PM

Does anyone have a good recipe for a chocolate cake with a raspberry filling? I'm open to a light and airy cake or rich and fudgy. I've tried a variety of recipes, but can't find what I'm looking for. Thanks!

It isn't chocolate cake with a raspberry filling, but check out the Chocolate Oblivion Truffle Torte in Rose Levy Beranbaum's The Cake Bible. It's an unbelievably dense chocolate mousse-like cake that I serve with her recommended Raspberry Sauce, fresh raspberries, and either whipped cream or creme anglaise. It's decadent. It's addictive. It's always a huge hit. And it's so extraordinarily rich that an 8-inch pan serves 16. Supposedly. Not with my guests.

The Chocolate Damnation in Michel Desaulnier's Trellis Restaurant cookbook is a chocolate raspberry dream. Bottom layer is chocolate-crusted chocolate cheesecake, topped with raspberry puree; then a chocolate cake layer, split and filled with chocolate mousse and raspberry puree, and covered with chocolate ganache. Despite the two days it takes to make it, it's really a simple process, and the results are both impressive and spectacularly delicious. (I brought it to a Xmas pot luck one year and was asked which bakery it was from - it's that good).

Nigella Lawson has a great recipe in "Nigella Bites" for Chocolate Cloud cake. It is a rich, but surprisingly ligth flourless chocolate cake. I usually make it my filling in the "dent" that is created on top with whipped cream, and cover with fresh rasberries- this looks amazing, and tastes sublime..
