Leftover BBQ pork ribs
I have a couple pounds of leftover BQQ ribs from the festivities last night. Any good ideas for what to make of them? While shredded pork sandwiches will be good today and tomorrow, I don't forsee myself wanting them for the next week straight. They have a nice smoky char to them so I was maybe thinking some sort of chili concoction; I'll probably freeze most of what I end up with.
I polished off a full rack last night that I smoked last summer and they were great. Just vacuum pack and freeze them. When you want to warm them up to eat, put some sauce on them, unless you like them dry, wrap in aluminum foil and pop in a 250°F oven for 2 hours. Pour some cold beer and its summertime again!
