Menu (with restrictions) to accompany Brunello

I am opening a bottle of 1993 Brunello di Montalcino shortly, and will be entertaining a couple of friends, one of whom is an Italian chef. The trouble is, his wife does not eat red meat.

Any menu ideas? Elegant yet robust, and not too ambitious so I don't embarass myself. Recipes would be great too.

  1. Try to find some nice wild salmon and cook it very simply; it pairs nicely with red wine.

    1. Last night my wife made a mushroom ragout over pasta with fresh shiitakes. Superb with red wine. It had chicken stock, so "no *RED* meat."

      If she eats bird, how about a roast chicken? Or goose?
      Or one of a million kinds of chicken stews?
