how do you cook fish heads?
No recipe, but B. Kliban did a cartoon many years ago of a cat folksinger with a guitar singing, "Fish heads, fish heads, roly-poly fish heads; Fish heads, fish heads, eat'em up, YUM!" Your query brought it immediately to mind.
i use fish heads and bones and place in bottom of large pot when preparing gefilte fish-
water, parsnip,root parsley,parsley, dill, celery,carrots onion,leek, celerac(celery root) and salt,pepper
I usually use them to make a stock. All it needs is ginger, green onions, or whatever you like in your chicken/vegetable stocks.
Adding a few vermicelli noodles, veggies, mushrooms, and/or tofu at the end makes it a nice soup, or just drink the stock as is.
you could also salt it and bake if it's a large fish head with lots of meat. Don't salt it as much as you would a filet, since there's not as much meat to absorb the salt.
