I have been craving chilaquiles for awhile now. This afternoon I looked at a package of stale white tortillas on the counter, and decided to try making some. They were pretty good, and husband ate three servings!! I don't know why I never tried to make them before...it was actually easy. Here's what I did: I cut the tortillas into strips, and fried them until crisp, then I drained them. I then made a simple sauce by sauteing onions and garlic, adding a chopped tomatoe, a small can of enchilada sauce, some chopped cilantro, a chopped and seeded jalapeno, and a cup of chicken broth. I mixed tortillas, sauce, and a couple of cups of grated queso fresco, then topped with a little more queso and some sliced onions. Put it all in a caserole and baked for about a half hour at 350. I served it with a little sour cream, since no crema in the house. Good, and had all the ingredients on hand!
