Easy/Tasty recipes to feed 40

I am looking for a few easy/inexpensive recipes to feed a party of about 40 people. It is going to be casual--people will eat while standing,and some will expect a full meal while others will be there to snack.
One thing that has always seemed to go over really well is to do roasted BBQ pork sandwiches. Get a bunch of roasts, roast them, shred the meat and add your favorite BBQ sauce. I usually just serve the meat in a crock pot and have a basket of pre-cut, higher quality, hard rolls along side. This way, if someone is exceptionally hungry, he or she can load up the roll. It also stops the rolls from getting soggy.
Homemade cole slaw is a great side.
There was a thread about this a while back- it might be worth searching for because there were a variety of suggestions.
Definitely good cheese, bread and olives with one of the following:
My favorite is a middle eastern spread- hummus, baba ghanoush, tabouli, falafel, grape leaves, pita, a salad, lentil salad, etc. It is food that is easy to eat while standing and you can eat as much or little as you want.
Also, a spread of coldcuts (storebought or roasted turkey, beef, etc; homemade chicken salad), with cheese, toppings, a salad, coleslaw, pasta salad, etc.
The middle eastern idea is a great one- hummus etc are so cheap to make in large batches.
I always make a HUGE pot of chilli as well on these occasions, as it can be made the day before..
Also a range of different salads are easy to prepare and dont take up "stove" or "oven" space

I have a tree-trimming party every Christmas, where the food is served buffet-style. What I find the easiest is to do either a ham or a roast turkey, then serve it sliced with bread so people can make sandwiches. I have sliced cheese for the vegetarians, and make potato and a couple of other side salads to round out the table. This year in addition to the potato salad, I made a roasted beet salad, a lentil dish, and a hearts of palm and tomato salad.
