1-banana recipe?

Help - i have *one* medium half-rotted banana, a dozen eggs, a ton of flour & sugar, some vanilla essence, baking powder and a can of ghirardelli cocoa mix. What can i make tonight (i.e. before banana totally liquefies) out of this that might be like a banana bread?

      Nahh..I am determined to have the smell of baking banana and grains tonight. How much flour/sugar/butter per banana goes into a b-bread recipe? Most recipes call for 3 medium ones, but I only have one.

      Maybe I could make one banana cupcake?

        .....just add the mashed banana to your favorite waffle batter recipe. Bake the waffles, then freeze til you need them in a heavy freezer bag, and reheat in a slow oven. Throwing in a few chopped walnuts wouldn't hurt, either. Mmmmmmmmmmmmmm........

        Thought of a couple more...

        Freeze the banana.

        --Make either a banana daiquiri....


        Banana ice cream

        Take the frozen banana and put it in a food processor, add some nonfat dry milk powder, OR some heavy cream, a little confectioner's sugar to taste, whir it up and you have instant banana ice cream.

        1. Put that banana in the freezer. It will keep until you have enough bananas to make a decent banana bread. One banana won't do it, unless you are making a mini-mini loaf, hardly worth heating up the oven for, in my opinion.

            If anyone is ever held captive again with just ONE molting banana, here's how to turn it into a small banana-breadish thing (completely edible and very yummy):

            1 ripe banana
            1/8 cup butter melted
            1/3 cup sugar (i used brown)
            1 small egg
            2/3 cup flour
            i tblsp cocoa (i used ghirardelli)
            1/4 tsp baking powder
            a pinch of salt

            Mix everything together and pour into a lightly greased (i used pam) baking container. I only have a 9 inch pyrex dish and there wasn't enough batter to cover that, so i poured it all into a one of the 4 inch *bowls* in my pyrex bowl set. It came out looking like a little volcano, but the chopstick i inserted in through the apex came out clean, and the whole thing slid out in a perfect cone. Served it with a dollop of creamy macadamia-nut ice-cream to make it seem like i knew all along what i was doing.

          2. Banana bread pudding is easy. Just layer the banana into a regular bread pudding.

            Also, banana creme brulees.

            1. Take a standard muffin recipe and replace some of the liquid with the banana.
