Comfort food-will you share your stuffed pepper recipe?

Now that it's cold and very wintery, I want to make some stuffed peppers. Please share your fav. pepper recipe. Thanks in advance!

    Don't know if you have access to poblanos...I live in FL and they are available pretty much year round...this recipe is for Chicken Stuffed Poblanos and it's greatly improved if you add a little chorizo AND chipotles in adobo to the chicken mixture (then it's sort of like tinga)...I don't really like regular stuffed peppers but am nuts about poblanos.

      I'm nutz about poblanos as well. If you can get your hand on some authentic cajun boudin, remove it from the casing and mix in some feta and pine nuts. Stuff in in the poblanos and bake. Talk about good.....

        We grow poblanos in the summer and this will be a great recipe for when you have so many peppers you give them to everyone you know! I've put it in my recipe box and will go to the market and get some poblanos this week. Thanks for the reply.
