does anybody know how to cook fresh cranberry beans?
Shell and boil until just tender. Then saute with whatever - olive oil, garlic, etc. Or, if you're putting them in, say, soup - just throw them into the soup. I bought a bushel of the things last fall and I cooked them and froze them. They're great.
This bean is great in pasta e fagioli. I've had them take close to 2 hours to become tender.
Yes. Lots of people are suprised when fresh shell beans take longer than soaked dried beans.
I think it helps to cover them with water and boil about 5 minutes or so. Drain, and start again. The cranberry is a lovely bean!
