Black Bean Cake?

  • 2

A 90-year old neighbor of mine had a dessert over Christmas. It was a sweet dessert cake that had black beans as an ingredient, as well as chocolate. She is searching for the recipe --

Has anyone heard of it? Do you have a recipe?

Thanks -

  1. This is what she may have had:

Black Bean Brownies (TRIED AND TRUE)

1 15oz. can of UNSEASONED black beans - drained and rinsed
    4 eggs
    1 1/2 cups Splenda (1 C wheylow)
    3 tbsp. unsweetened cocoa powder
    1 tsp. baking powder
2 tbsp. oil (I used canola) OR 2 tbsp unsweetened applesauce (phase II)
    1 Tbs Vanilla - (I love it - so I used lots)
½ Cup nonfat dry powdered milk (optional – recommended if using Splenda)
½ tsp baking soda (optional – recommended if using Splenda)
¼ Cup ricotta cheese (for a moister brownie)
chopped nuts - optional (I used chopped walnuts)

Preheat oven to 350 degrees. Mix all ingredients in a food processor or
blender. Pour into an 8x8 baking pan sprayed with cooking spray or oiled with
canola or olive oil. Bake for 30-40 minutes. (til toothpick pulls out clean

    SPICED BEAN PANCAKES
1 15 oz. can canelli beans or other white bean (drained & rinsed) (I had best result with garbonzos)
4 large eggs (fake eggs work fine)
½ Cup Wheylow (can use Splenda, but add ¼ tsp baking soda and ¼ cup nonfat dry milk to help the rise)
    2 tsp. baking powder
2Tbsp oil (I use half oil half appliesauce)
    1 tsp Vanilla
    1 Tbls Pumpkin Pie spice
    1 tsp butter extract
1/4 cup toasted chopped walnuts (OPTIONAL)
Process your rinsed and drained beans in a food processor until smooth. Add all of the other ingredients and process until mixed. Beat the bejeezus out of it! Pour mixture onto a heated no-stick griddle or skillet (325 degrees) sprayed with Pam. Flip them over when pancakes “bubble” on top, just like regular pancakes.
I make 3 to 4 inch pancakes, this recipe makes about 16 of those. I would say 4 is a serving, so this makes 4 servings.
Or pour into 8 x 8 baking pan, bake til toothpick inserted in center pulls out clean.
    Serve with SF syrup.
