Rabbit Recipes

Anyone have a favorite rabbit recipe to share? The butcher at my Italian market talked me into two (whole) 2.5 pound rabbits and I don't know what to do with them.

I've googled, but still feel unsure on how to proceed. I had a divine rabbit ragu once and think that might be the way to go but the recipes I found don't look quite right.

  1. Warm, slow braising works well. Cover with some chicken stock and add mustard and cream at the end.

    I like them cut up ala Zuni Cafe (if you have that cookbook) with legs and forelegs braised and the loin cooked quickly.

    1. Saveur has a terrific recipe for Lapin a la Moutarde. If you go to the website, and just put in rabbit under teh recipe search you will find it. Delicious!

      1. Fried rabbit. oh man, that's good. Just use your favorite method for frying chicken.

        1. I like rabbit paprikas, but pretty much any chicken recipe you like will work for rabbit.
